Salame is a cold cut made of cured pork meat, both fat and lean cuts, that is a staple in Piedmontese cuisine.

This variation of the classic salame is enriched with summer black truffle, an Italian excellence, that gives it a peculiar and intense aroma. Enjoy the salame as an aperitif or as an entrèe together with some bread and mature cheese, paired with a strong red wine.

Authentic traditional cheese

Perfect for risotto or pasta

Gorgonzola , a blue-veined raw cheese made from cow's milk and characterised by blue-greenish streaks due tothe formation of mould. Its history dates back to 879, but Piedmont was the place that refined the processing technique and allowed it to spread all over the world until 1996 when it was recognised by the European Community and registered in the list of DOP products.

The sweet Gorgonzola of Palzola has a characteristic of creaminess that stands out in the DOP panorama. What distinguishes this product is the ability to maintain this feature for several days.In addition, its cream is pleasantly mixed up with a delicate and well-melted marbling in the mass. Aged for a period of 60 to 70 days in the old owned farmhouses, real aging cellars coated in cotto are able to maintain the values of humidity and temperature in the cheese.

Important: sweet and spicy are the two types of Gorgonzola. The “sweet” is the creamy one, although there is no sugar in it, while the “spicy” does not have neither pepper nor chili, but it is so called for its masculine and pronounced taste.

Serving suggestions: pasta, risotto.

Taste: soft, less strong than spicy gorgonzola, with robust traces of penicillin.

Aspect and texture: soft, yellow paste with bluish-green marbling. The rind is light reddish and is usually protected by tin foil.

Milk: full fat, pasteurised, cow’s milk.

Ripening: at least 60 days.

The Tartufissima is the first truffle pasta ever produced in the world. The “Tartufissima Pasta” began in 1990, thanks to the experience and culinary imagination of Beppe, chef and founder of Tartuflanghe.

This pasta has an extraordinary texture given by the handmade shape, a high percentage of truffle and a great quantity of eggs which enhances the truffle flavor.

In 2012 the Tartufissima pasta has been chosen by Oprah Winfrey and included in the “Oprah’s favourite things“, the famous list drawn up by the American anchorwoman for the Christmas festivity.

Chef’s tips:

Bring 5 quarts (approx. 2 liters) of water to a boil, then add the salt. Add the pasta and cook for 3 or 4 minutes until “al dente” (still firm). Melt the butter in a separate saucepan. Drain the pasta and return it to the saucepan and toss over medium heat for about 1 minute. Add grated Parmesan cheese and serve immediately.

Two years later the Tartufissima N19 was awarded as “Outstanding new product” at Fancy Food Summer Show of New York City. Its special characteristics makes it so succesful: the completely handmade shape which gives an extraordinary texture to the pasta, the high percentage of truffle, the sophisticated and well-balanced taste and the great quantity of eggs that enhances the flavour of the truffle.
In 2012 the Tartufissima pasta has been chosen by Oprah Winfrey and included in the “Oprah’s favourite things“ the famous list drawn up by the American anchorwoman for the Christmas festivity.

Piedmontese “bollicine” (lit. little bubbles) are a tradition we are so proud of.

Spumante Metodo Classico Brut is one of the most exquisite and raffinate dry sparkling wine, made with Chardonnay grapes by Roccia Rossa winey. Following the “Metodo Classico”, after the first fermentation the wine with yeasts and protein is aged in the bottle from 18 to 30 months, and then the residue is eliminated.

The result is a complex wine with hints of yeast and a fine and persistent perlage.
This unique spumante is made to be served chill and to be enjoyed on any occasion, with a traditional aperitif or with dessert at the end of the meal.

Grape Nebbiolo

Vintage 2016

Alcohol volume 13%

Serving Temperature 8°-10°C

Hallé Rosé sparkling wine is made from the earliest grapes of Enrico Crola's Nebbiolo vine, in order to preserve the right acidity and not have an excessive alcohol content.
The Nebbiolo grapes, once separated from the pips, are transferred directly to the press. Extremely soft pressing and maceration in the press for 2 hours, dry ice to maintain a very low temperature in order to best preserve the fragrance of the Nebbiolo. The skins and the must remain together for a few hours, precisely to obtain that particular and delicate shade of antique pink that distinguishes the Rosé. Then the must, now separated from the skins, ferments in temperature-controlled steel tanks.
Re-fermentation: This takes place in bottles according to the "Metodo Classico" (the first in our area to produce this type of wine).

The nose immediately transmits a lively sensation of pleasantly fresh and citrus notes. On the palate it offers a fine and elegant perlage.

Food pairings: Aperitifs, fish and white meat. Perfect for celebrations!

MY PERSONAL OPINION/EXPERIENCE:

I adore Italian Food and Everything what I tasted from Piedmont Delights are sooo Delicious and Top Quality. I am a huge fan of Truffle and they have top quality products with Truffle. The flavours are sooo Good. I already tried other brands with truffle but Piedmont Delights is so far the best. I can´t decide what products are my favourite because everything is sooo Good. If you Love Truffle, The Pastas, the salame,  creams, sauces,oils with Truffle should be on your Must try list. They are incredible. 100% recommend Piedmont Delights Goodies, you will Love, I promise.

They have also many different types of cheeses, cold cuts too, I tried only the Truffle Salame ( which is the best one ever what I had, it is soooo good) and a gorgonzola cheese but you can find a huge selections from each on their site.
